This is from Animal Locomotion plate 522, which shows five gymnastic exercises, the last of which is listed as "spring over man's back." From the other photos on the plate, is looks exactly like extreme leapfrog, jumping over a standing man.
Like the tug o' war, leapfrog was used to train athletes of many disciplines in the Victorian era - although I agree that this seems an extreme case!
