Farmer
I posted a different view of this farmer using a scythe a couple of years ago.
The official Muybridge plate title refers to it as "mowing."
I think it may be, and the tassel is more visible in other shots of this and at least one additional model. I can't imagine the purpose unless it was to keep longer hair from interfering with the lines of the images . . . and that's a stretch.
According to a better documented than average Wikipedia entry, US football players used no head protection until 1896, and it was mostly ear covers. So no football connection for the picture.
Is that the classic "smoking cap"? I think I can just make out the tassel.

DeleteI wondered if it were a padded, protective US football cap. Rugby players here wear similar.
